The total sugar production in the world in 1990 was 11 million tons and it has been raised to 116 million tons in 1994/95.30 percent of sugar production in the world is obtained from sugar beet. Recoverable sugar yield from sugar beet differs from one region to another and depends on growth conditions. One of the most important factors which causes this sugar yield difference, is the quality of beet roots. For quality determination of sugar beet in European countries and America, the researchers have presented many formulas. The evaluation and comparison of these formulas show that they can be used for a certain production area and specially can not be applied for Iran with subtropical climate and if they are used the results in practice are not acceptable and applicable. Consequently, since there is no formula for subtropic conditions, such as Iran, therefore it is necessary to determine the suitable formals for its specific conditions.
