This study was carried out at the agricultural research center of Fars, Iran. The experimental design was a split plot with four replications. Spraying times=three, four and five weeks before harvest and maleic hydrazide of 0.2000.2500 and 3000 ppm concentration were respectively associated major and minor plats. After harvesting both root and foliage parts were separately weighed. Half of the roots were pulped at harvest and the rest were used to investigate the effect of the hormone on the storing quality of roots after one month of storage. Chemical components of roots were determined. All characteristics like root yield, amount of foliages, ratio of roots to foliages, sugar yield, and impurity components have not changed in response to concentrations of maleic hydrazide as well as spraying times.
